Brisket

Brisket is a beef cut. But it is also the name of a dish of US Southern cuisine. One thing I have learned in my stay in the US is that Southerners may or may not believe in God, but they all worship their barbecue. It is a cult I can see myself becoming a disciple of.

Anyway, the brisket is a large piece of meat, rubbed in several spices, and then smoked for many hours.

The cooking process for me was a counter intuitive one. If you think about it, if you want to ruin a good steak and make it as hard as a pebble, the best thing is to overcook it. With the brisket you need to do just that: by cooking it for an extremely long time, the fat in the cut turns the meat into something so tender you can cut it with your bare hands. The final product has a specific texture, which some (i.e. my wife) find slimy.

This past weekend I had brisket for the first time. It was cooked in this massive smoker here.

This smoker is bigger than my car. But it is nothing compared to what I saw in Texas.

Can you judge from my face below if I liked my brisket?

I had amazing brisket (and baby back ribs) in a barbecue place in Kansas City, MO. Somewhere on the web are some pictures of me in ecstasy...

I had never understood what it was, before trying it yesterday. Which made me wonder: how many good foods have I yet to discover???

omg, questo blog è uno spettacolo, anche io sono affascinato dal cibo da mangiare per strada, panini, e anche junk food. Ma non disdegno per niente nemmeno il mangiare sano,antico e tradizionale.

Michele if you liked the brisket. There is a good place on bucktown that only sells brisket! we should take you one day.

You should now to a brisket taste test. There are several places to try: Smoque, Smoke Daddy's, Twin Anchors etc. Yes, there are other things you have not tried. You should try a breaded steak sandwich from Ricobene's. I think it is fantastic, but you should have it with cheese and sauce. YMW
